Best Egg Substitutes For Baking

Unless you have been living under a rock, you are aware of the soaring price of eggs in our country right now! I want to go over some substitutes that you can use in place of eggs. But before I do that, let’s talk about why the price of eggs is soaring.

First, there is more than one reason why egg prices have soared. The main cause is the ongoing bird flu epidemic. According to CBS News, nearly 58 million birds have been infected in what is the deadliest outbreak in US history.  In order to stop the outbreak, infected birds must be euthanized.

In addition to the bird flu, the rise in the cost of feed, fuel and labor costs has contributed to the cost of eggs.

All of this has resulted in record high prices as well as egg shortages.

So whether you cannot find eggs where you are, or if your just not willing to pay the price, I have put together a list of some substitutes you can use in place of eggs.

  • Applesauce – This can make a great substitute when baking. Use ¼ cup of applesauce per egg. Whenever possible, use unsweetened applesauce. If you don’t have unsweetened on hand, you can decrease the amount of sugar you use in the recipe. If you’re wondering what to do with the leftover can of applesauce, you can always put it into an ice cube tray. Once frozen, put into freezer bag and use at a later date. A typical ice cube is equal to 1 ounce, or two tablespoons. Two frozen cubes would be equal to ¼ cup. If you don’t have applesauce, you could always make your own!
  • Banana – A ripe, mashed banana can make a great egg substitute. Use half a banana in cakes, breads or even pancakes. This may result in a banana flavor, so be mindful of that when you consider this substitute in your recipe. It would be great in something like banana or apple bread, but maybe not so much in something like chocolate cupcakes!
  • Nut Butters – Peanut, cashew and almond butters can be used as an egg substitute. Use about 3 tablespoons to equal one egg. Using nut butters can also result in whatever you are making to alter the flavor. This may taste better is something sweeter rather than savory.
  • Yogurt – I would recommend using ¼ cup of plain, Greek yogurt if you are going to use it as an egg substitute. This works best in cakes, muffins or cupcakes. It will keep your bakes nice and moist.
  • Buttermilk – Buttermilk is another great substitute for eggs and is also considered interchangeable with yogurt. Again, ¼ cup will substitute for 1 egg. If you don’t have buttermilk on hand, you can make your own with milk and white vinegar. Simply add 1 tablespoon of vinegar to a 1 cup measure and fill the rest up with milk. Stir together then let sit for about 5 minutes. I have tried this before and it actually works!
  • Baking Soda & Vinegar – By mixing 1 teaspoon of baking soda with 1 tablespoon of vinegar, you can replace eggs in recipes. This is best for recipes that are light and airy, not dense and moist. The vinegar flavor gets cooked out so don’t worry about being able to taste it.
  • Ground Flaxseed – You can ground flaxseed yourself with a mortar and pestle or you can buy it in the store. It will often be called flaxseed meal and is typically in the health food section. Mix 1 tablespoon of flaxseed with 3 tablespoons of water. Let sit for about 10-15 minutes.
  • Bob’s Red Mill Egg Replacer – Excellent replacement for whole eggs, egg yolks and egg whites. Package contains the equivalent of 34 eggs. Just add water. There are only 4 ingredients: potato starch, tapioca flour, baking soda and psyllium husk fiber.
