These copy cat thin mints are gluten free and vegan! If you have dietary restrictions, this recipe is a great alternative to the real thing!
In an effort to make more things from scratch at home, I am making a gluten free, vegan version of thin mint girl scout cookies. Of course, I encourage you to support your local girl scouts! But if you are vegan or gluten free, this gives you an option to still be able to enjoy a version of these cookies. Plus, you get the added bonus of knowing exactly what ingredients are in the cookies you are eating.
I know you may be thinking there is no way that these taste like the real thing, but I promise they do! Even my kids approved of them! Nothing can replace the real thing, but this recipe gets you pretty close to the real deal.

Since this is a gluten free option, you will need to purchase an alternative to wheat flour. This recipe calls for almond flour. You can typically get this right in the health food section of your grocery store. If your store doesn’t carry it, you can grab some here.

Directions:
Directions: Combine and mix all cookie ingredients in a bowl until a dough forms. (Mixture may be crumbly). Refrigerate for 15 minutes.
Preheat oven to 350 degrees and line baking sheet with parchment paper or silpat mat (I use these: https://amzn.to/3ZVU4uT).
Place chilled dough in between 2 pieces of parchment paper and roll out to 1/4 inch thick with a rolling pin.
Use a small circular cookie cutter and cut out 16 rounds. (I used a shot glass)
Place cookies in oven for 10-15 minutes. Cool completely.
Melt chocolate chips and coconut oil for topping in microwave or by using a double boiler. Once melted, add peppermint extract.
Dip cookies with a fork into melted chocolate and let excess drip off.
Cool in fridge or freezer until chocolate has hardened and enjoy! Store in fridge or freezer.
