Making garlic salt & garlic powder from scapes is super easy!

It’s garlic season again which means it’s time for garlic scapes! Garlic scapes are the curly, green shoots that emerge from the tops of garlic plants. They are often harvested in late spring or early summer before they fully develop into garlic bulbs. With a mild garlic flavor and a hint of sweetness, garlic scapes are highly versatile and can be used in various culinary preparations. They are commonly chopped and sautéed, added to stir-fries, incorporated into pesto, or used as a flavorful garnish. Their vibrant green color and unique shape make them visually appealing and a delightful addition to dishes.
Hard neck garlic is a variety of garlic characterized by a stiff, woody stalk that grows from the center of the bulb. It gets its name from the solid, hard stem that runs through the center of the garlic bulb. Unlike soft neck garlic, hard neck varieties produce fewer cloves but generally have larger individual cloves. They are known for their rich, complex flavors that can range from spicy and robust to earthy and nutty. Hard neck garlic is favored by many chefs and garlic enthusiasts for its intense flavor and ability to add depth to a wide range of dishes. Additionally, hard neck garlic often produces edible scapes, which can be harvested and used in cooking as well.
Making your own garlic powder or salt is a simple and rewarding process. Once you have harvested your scapes, give them a good rinse and let them dry. Then add them to your food dehydrator on the lowest setting. It will take many hours for the scapes to completely dehydrate. If you don’t have a food dehydrator, you can always use your oven at the lowest setting. Once dehydrated, add them to a food processor and mix into a fine powder. Store in an airtight container and enjoy while cooking!
