These homemade banana bread muffins are a family favorite in my house! This is by far, the most baked item in my home. It doesn’t matter the time of year either! It can be a blazing hot summer day or cold and snowy. I switch it up by making bread or muffins, but I have found that the muffins last a little bit longer than the bread.
I have never known this banana bread to last more than 3 days in my house! Having over-ripe bananas in my house is a welcomed sight! If I am not ready to use ripe bananas right away, I will peel the bananas and throw them in a baggie in the freezer until I am ready to use them. Once they thaw, be sure to pour out any additional water before you begin baking. I have been making this banana bread for years, so much so that I know the recipe by heart. I got this recipe from my mom years ago and I haven’t used another once since.

This recipe is versatile in that you can make muffins, loaves, mini-loaves, and you can add or omit ingredients like chocolate chips, walnuts, raisins and cinnamon. I have also substituted with almond and coconut flour as well as xylitol to make a “healthier” version of this recipe. The result when using the substituted ingredients is a much moister muffin that does not hold together as well as with the original ingredients. Either way, just as yummy!
