Homemade Banana Bread (Muffins)

These homemade banana bread muffins are a family favorite in my house! This is by far, the most baked item in my home. It doesn’t matter the time of year either! It can be a blazing hot summer day or cold and snowy. I switch it up by making bread or muffins, but I have found that the muffins last a little bit longer than the bread.

I have never known this banana bread to last more than 3 days in my house! Having over-ripe bananas in my house is a welcomed sight! If I am not ready to use ripe bananas right away, I will peel the bananas and throw them in a baggie in the freezer until I am ready to use them. Once they thaw, be sure to pour out any additional water before you begin baking. I have been making this banana bread for years, so much so that I know the recipe by heart. I got this recipe from my mom years ago and I haven’t used another once since.

Versatile Recipe

This recipe is versatile in that you can make muffinsloavesmini-loaves, and you can add or omit ingredients like chocolate chips, walnuts, raisins and cinnamon. I have also substituted with almond and coconut flour as well as xylitol to make a “healthier” version of this recipe. The result when using the substituted ingredients is a much moister muffin that does not hold together as well as with the original ingredients. Either way, just as yummy!

Ingredients

Here is what you will need:

  • Ripe Bananas
  • Eggs
  • Unsalted Butter
  • Flour
  • White Sugar
  • Salt
  • Baking  Soda
  • Chocolate Chips (optional)
  • Walnuts (optional)

Homemade Banana Bread (Muffins)

This classic recipe is a family favorite!

Ingredients
  

  • 3-4 Ripe Bananas
  • 2 Eggs, Lightly beaten
  • 2 Tablespoons Butter, Melted, Unsalted
  • 2 Cups All Purpose Flour
  • ¾ Cups White Sugar
  • 1 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • ¾ Cups Chocolate Chips (Optional)
  • ¾ Cups Walnuts

Instructions
 

  • Preheat oven to 350°F(175°C), grease 2 12-cup muffin tins. (Or loaf pan, depending on what you are making)
  • Place bananas in mixing bowl. Mash with fork until smooth.
  • Add eggs and butter to bananas and mix together. Add sugar and mix.
  • Add flour, salt and baking soda and combine well.
  • Mix in chocolate chips and walnuts. (If desired)
  • Pour batter into prepared muffin tins, filling ¾ full. (Or add all of the mix to loaf pan)
  • Bake for 20-25 minutes or until a toothpick comes out clean. (If you are making a loaf, it will need to cook a bit longer)
