I stumbled across a version of this recipe a few years ago and have since made it my own. This has become a family favorite and really does make you feel like you are indulging in creamy, smooth mashed potatoes!

If you’re anything like me, you can get stuck cooking the same thing over and over again. Especially if you are looking for low carb options. Roasted and steamed vegetables are great, but sometimes it’s nice to have something different.

Cauliflower is an incredibly versatile vegetable that can be used in a wide range of dishes. It has a mild flavor that allows it to blend seamlessly with other ingredients, making it a popular choice for low-carb and keto diets. Cauliflower can be roasted, sautéed, mashed, or pureed, and can be used as a low-carb substitute for rice, pizza crust, or mashed potatoes. The possibilities are endless with this nutritious and adaptable vegetable.
This dish comes together really easily and requires minimal effort. Start by rinsing a head of cauliflower and chop into bite size pieces. I cook mine right in the microwave in a vegetable steamer, but you can cook this on a stovetop as well. I use a vegetable steamer similar to this one. Steam the veggies and drain once they are cooked through. Drain and let sit uncovered for about 5 minutes, then drain again. Do not skip this step! Doing this will allow for extra moisture to be removed from the cauliflower. Skipping this step will change the consistency of your dish.
This dish comes together with only a few ingredients and it’s likely you have everything you need without making an extra trip to the store.

Rinse cauliflower and chop into bite sized pieces. Steam in microwave or on stovetop until cooked through. Drain and let sit uncovered for about 5 minutes. Drain again after 5 minutes and add to blender. I use a Ninja blender. Add remaining ingredients until you get a smooth consistency. Transfer to oiled dish and put in 350 degree oven for about 15-20 minutes. The cauliflower is already cooked, so you are just warming it through. If desired, add cheese, bacon bits, chives, or other topping of your choice and place under broiler to melt.
