Mini Blueberry Muffins

These mini blueberry muffins are a great alternative to the store-bought muffins! They make a great snack on the go!

Simple Ingredients

Unlike the store-bought version, these homemade muffins have only 8 ingredients. Leave preservatives like propylene glycol monosterate out of the mix!

Directions and Ingredients

I wanted to keep this recipe easy, so I decided to just use the base of my banana muffin recipe and swap out the bananas for fresh blueberries. I forgot one very important thing though! Since I didn’t have the moisture of the bananas, my mix was very dry. Luckily, just adding some milk did the trick and made a nice base for these muffins.

Here is what you will need:

  •  1 Pint of Blueberries
  • 2 Eggs, Lightly Beaten
  • 2 Tablespoons Butter (Unsalted), Melted
  • 2 Cups All Purpose Flour
  • 3/4 Cups White Sugar
  • 1 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1/2 Cup Milk

Instructions

Preheat oven to 350°F(175°C), grease mini muffin tin (or regular size if you prefer) 

Add melted butter and eggs to sugar and mix 

Combine flour, salt and baking soda and combine well 

Add sugar mixture to flour mixture and combine 

Mix in milk 

Fold in blueberries 

Pour batter into prepared muffin tins, filling ¾ full Bake for 20 minutes or until a toothpick comes out clean. Baking times will vary based on size of tin used.

Stuffed Mushrooms with Cream Cheese & Bacon

Low Carb appetizer or side dish!

Ingredients
  

  • 1 lb Mushrooms
  • ¼ Cup Bacon Bits
  • ¼ Cup Parmesan Cheese
  • 4 Ounces Cream Cheese
  • 1 Tablespoon Minced Garlic
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Fresh Chives (plus more for garnish)
  • Salt & Pepper to taste

Instructions
 

  • Preheat oven to 400 degrees and place a silpat mat on a baking sheet
  • Clean off mushrooms with damp paper towel and remove stems. Set stems aside.
  • Brush the mushrooms with the olive oil.
  • Chop up mushroom stems and add to bacon, parmesan cheese, cream cheese, garlic, chives, salt and pepper. Combine all ingredients.
  • Fill the mushrooms.
  • Bake for 15 minutes until mushrooms are cooked through.
  • Garnish with additional chopped chives and enjoy!
