Stuffed Mushrooms

Stuffed mushrooms are a delicious appetizer or side dish that are easy to make and can be customized to suit a variety of tastes. Follow a recipe or make up your own!

Appetizers or Side Dish

Mushrooms are typically filled with a savory mixture of breadcrumbs, cheese, herbs, and sometimes meat or vegetables. They can be baked or grilled until the mushrooms are tender and the filling is golden and crispy. Stuffed mushrooms are a great option for those following a low-carb or keto diet, as they can be made without breadcrumbs and still be flavorful and satisfying.

Chaos Cooking!

Some days in the kitchen are a breeze and everything comes together just as you planned. Then, there are days like when I tried making these stuffed mushrooms. If it could have gone wrong, it did! From electrical malfunctions to forgetting ingredients, it’s amazing these mushrooms turned out at all! Luckily, I can laugh through the chaos and not beat myself up about the things that go wrong in the kitchen.

Versatile Dish

Stuffed mushrooms are a versatile dish and can be prepared many ways. This can be a low carb option and can also be prepared as a vegan dish. Depending on how you prepare the mushrooms, it can feel like a different side dish or appetizer each time you make them! Due to my chaos when I made these, this was a main dish for dinner!

What You'll Need

I very loosely followed a recipe when I made these mushrooms. And even the ingredients I planned on using, I forgot! You can follow this recipe or make up your own! That’s one of the things I love about cooking, you can make it your own!

Ingredients:

  • 1 pound mushrooms
  • 1/4 cup bacon bits
  • 1/4 cup parmesan cheese
  • 4 ounces cream cheese
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon fresh chives (plus more for garnish)
  • salt and pepper to taste

Directions:

Preheat oven to 400 degrees and place a silpat mat on a baking sheet (I use these: https://amzn.to/3ZVU4uT).

Clean off mushrooms with damp paper towel and remove stems. Set stems aside.

Brush the mushrooms with the olive oil.

Chop up mushroom stems and add to bacon, parmesan cheese, cream cheese, garlic, chives, salt and pepper. Combine all ingredients.

Fill the mushrooms.

Bake for 15 minutes until mushrooms are cooked through.

Garnish with additional chopped chives and enjoy!

Stuffed Mushrooms with Cream Cheese & Bacon

Low Carb appetizer or side dish!

Ingredients
  

  • 1 lb Mushrooms
  • ¼ Cup Bacon Bits
  • ¼ Cup Parmesan Cheese
  • 4 Ounces Cream Cheese
  • 1 Tablespoon Minced Garlic
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Fresh Chives (plus more for garnish)
  • Salt & Pepper to taste

Instructions
